Grillied Bangus (Milkfish) and Procedure of Grilling
Milkfish or bangus could be the most famous and common fish for food among Filipino people. Bangus signify as one of our national symbol for becoming as Philippine national fish. Bangus is usually bred in a fish cage, there are a lot of places in the Philippines where bangus are cultured. Dagupan is the most famous among them, Dagupan is known for their delicious and fatty bangus fish, they even have their local festival commemorating the significance of Bangus to their province. In one of their bangus festival festivities, they made a record on Guinness world record for having the longest barbeque grill for bangus in a certain time, during that time they grilled 24,000 pcs of bangus in two kilometer span. Bangus is the product of Dagupan and they are the major supplier of Bangus in Metro Manila and other region in the Philippines.
Aside from Dagupan there are still other places in the Philippines that rely on bangus farming as their major means of livelihood. They are the bangus farmer of Bulacan, Batangas, Laguna to name some. Aside from culturing bangus, bangus is also being caught by fisherman in the seas, Philippines is an archipelago country and surrounded by vast seas and ocean.

Grilled Bangus : Grilled bangus is an all time favorite for Filipino meal, bangus is stuffed with tomato, ginger, onion with salt, vetsin and ground peppercorn. As I have said above, Dagupan holds the world record for the longest bangus barbeque grill ranging two kilometer long. It only proves how Filipino loves eating grilled bangus.
Sinigang na Bangus : I just read an online poll that most Filipino choose sinigang recipe as the most identified food for Filipino. Sinigang are usually cook using pork, beef, different kind of fish that include bangus. Milkfish is the most preferred fish by common Filipino for cooking sinigang sa miso because of the affordability and availability in local market.
Daing (dry fish) na Bangus: the exact English translation of daing is dry fish but in bangus it is different. Unlike with the common Filipino daing na isda that are being preserved by adding salt and sun drying is different, daing na bangus is usually marinated with vinegar, salt, ground peppercorn, minced garlic for a day. It is perfectly served with fried rice and brewed coffee for breakfast.
Rellenong Bangus: It is another popular bangus recipe that usually prepare for special occasion, the process with rellenong bangus is complicated because you have to remove the flesh and bone of bangus without damaging the head and skin of the fish. After removing the flesh it is being shredded and sauté with some additional ingredient for extra flavor. Bangus is filled with the cooked meat then fry.
